Vines are more than 50 years old and they benefit from a south-east exposure. Traditional cultivating practices are used to extract the best of this special terroir. Cold maceration for five days with natural fermentation starting at a naturally low temperature. Fermentation lasts 20-25 days which optimizes the extraction of color and tannins. Moulin a Vent is known for its power, structure and longevity. The Barbet's like to hold onto this wine and release it when it begins to open up. Made in open top, oak vats and aged in barrels and foudres for a year. Beautiful aromatics with notes of violets, juicy cherry and subtle tannins with structure. JS 93pts.
