Wine maker notes vineyards mainly selected from the foothills of theAndes Mountains. Winter`s extended snow permanence in the mountains allow the descending winds to exercise a moderating influence in the valley`s temperatures. This action, associated to the soil characteristics, makes the Sauvignon Blanc variety to take longer to ripen, allowing the development of all its characters and concentration. Though an important volume of these grapes are produced by third parties, a great percentage of the latter (over 85%) are under Santa Rita`s agricultural engineers supervision in order to control all viticultural practices in accordance to the winery`s demands

| Grapes are de-stemmed and immediately pressed. A rigorous selection of fruit ensures balance and depth. Fermentation of musts at low temperatures in stainless steel leads to maximum varietal expression. The resulting wine is aged in stainless steel. |
