This is a rich, full flavored sake with fresh-cut green grass aromas and hints of tropical fruits with cantaloupe leading by a nose. The mouth feel is silky with mango and baked pear flavors and suggestions of creme brulee, though the sweetness is kind to the palate with excellent acidity leading the way to the finish.
Junmai Ginjo. Made by Chiyonosono Shuzo, Kumamoto Prefecture. Made using Shinriki, a midsize rice that is easy to grow and harvest. From the late 1800s to the early 1900s it was grown widely in Western Japan, and has not changed much since. It is the ancestor of much of today's sake rice. Enjoy the rich, mellow flavor and deep recesses of this sake.
