Beautiful topaz/old gold color; some sediment spotted floating in the core. Out of the gate, the opening aroma is remarkably fruity and biscuity, almost like sugar cookies, yet there's also a yeasty / doughy quality that's fresh and vivid. It turns a little spicy and toasted that adds a pleasing aspects to the fruit and cookie batter scents. Entry taste is like buttered toasted wheat bread with cherry preserves and is consequently gently sweet in an old honey manner; the substantial mouth feel is delightful at mid palate, as are the rich oak and sap tastes that balance the honey element with grace. Concludes a bitter-sweet toasty finish. Spirit Journal - Highly Recommended
