Appleton Estate aged rums adhere to Scottish-English law, which states that all the rums used in the blend must be at least the age stated on the bottle—each rum in this case was aged a minimum 21 years. Appleton Estate Jamaica Rums are 100 percent Estate produced and bottled: the entire process of making and aging the rums takes place on site. Appleton 21-Year-Old uses a combination of small batch copper pot and column distillation designed to impart a distinctive character to the Appleton Estate Rum portfolio. The rums are then laid to mature in small oak casks, where they develop rich aromas, color and sweetness before blending.
